AFGHAN LUBYA WITH RICE
A warm, mild kidney-bean dish with tomato, cumin and coriander. This shelf-stable version uses canned beans and pantry seasonings.
Ingredients
2 cans (15 oz each) kidney beans, drained and rinsed
1 can (15 oz) diced or whole tomatoes, with juices
1 cup vegetable broth or water + vegetable bouillon
2 tbsp vegetable or canola oil
1 tsp ground coriander
½ tsp ground cumin
½ tsp dried mint (optional)
1 tsp onion powder
1 tsp garlic powder
Black pepper and salt to taste
1½ cups dry rice + water needed to cook it
Directions
1. Cook the rice according to the package directions and set aside.
2. Heat 1 tablespoon oil in a pot over medium-low heat. Add coriander, cumin and optional mint. Stir about 30–60 seconds, just until fragrant.
3. Add the tomatoes and their juices. Cook about 7–10 minutes, stirring and mashing the tomatoes until saucy.
4. Stir in the remaining oil, onion powder and garlic powder. Cook about 1 minute.
5. Add broth and kidney beans. Season with black pepper and a little salt.
6. Simmer uncovered on low heat about 15 minutes, stirring occasionally, until the sauce thickens. Add a splash of water if it becomes too thick.
7. Taste and adjust the seasonings. Serve the lubya over or beside the rice.
Use What You Have
Fresh onion and garlic? Use them instead of powders. Whole cumin/coriander seeds? Toast them in the oil. Have dried mint? Add it. Basmati rice is traditional, but any white rice works.

LUBYA AFGANA CON ARROZ
Un platillo suave y reconfortante de frijoles rojos con tomate, comino y cilantro molido. Esta versión usa frijoles enlatados e ingredientes de despensa.
Ingredientes
2 latas (15 oz cada una) de frijoles rojos, escurridos y enjuagados
1 lata (15 oz) de tomates picados o enteros, con su jugo
1 taza de caldo de verduras o agua + consomé de verduras
2 cdas. de aceite vegetal o de canola
1 cdta. de cilantro molido (semilla de cilantro)
½ cdta. de comino molido
½ cdta. de menta seca (opcional)
1 cdta. de cebolla en polvo
1 cdta. de ajo en polvo
Pimienta negra y sal al gusto
1½ tazas de arroz seco + el agua necesaria para cocinarlo
Preparación
1. Cocina el arroz según las instrucciones del paquete y déjalo a un lado.
2. Calienta 1 cda. de aceite en una olla a fuego medio-bajo. Agrega cilantro molido, comino y la menta opcional. Revuelve de 30 a 60 segundos, solo hasta que suelten aroma.
3. Agrega los tomates con su jugo. Cocina de 7 a 10 minutos, revolviendo y aplastando los tomates hasta formar una salsa.
4. Agrega el resto del aceite, la cebolla en polvo y el ajo en polvo. Cocina aproximadamente 1 minuto.
5. Agrega el caldo y los frijoles rojos. Sazona con pimienta negra y un poco de sal.
6. Cocina destapado a fuego bajo unos 15 minutos, revolviendo de vez en cuando, hasta que la salsa espese. Agrega un poco de agua si queda demasiado espesa.
7. Prueba y ajusta los condimentos. Sirve la lubya encima o al lado del arroz.
Usa Lo Que Tengas
¿Tienes cebolla y ajo frescos? Úsalos en lugar de los polvos. ¿Tienes semillas enteras de comino o cilantro? Tuéstalas en el aceite. Si tienes menta seca, agrégala. El arroz basmati es tradicional, pero cualquier arroz blanco funciona.

لوبیای افغانی با برنج
یک غذای گرم و ملایم با لوبیای قرمز، گوجهفرنگی، زیره و تخم گشنیز. این نسخه با مواد ماندگار و لوبیای کنسروی تهیه میشود.
مواد لازم
۲ قوطی (هر کدام ۱۵ اونس) لوبیای قرمز، آبکش و شستهشده
۱ قوطی (۱۵ اونس) گوجهفرنگی خردشده یا کامل با آب آن
۱ پیمانه آب سبزیجات یا آب همراه با عصارهٔ سبزیجات
۲ قاشق غذاخوری روغن نباتی یا کانولا
۱ قاشق چایخوری تخم گشنیز آسیابشده
½ قاشق چایخوری زیرهٔ آسیابشده
½ قاشق چایخوری نعناع خشک (اختیاری)
۱ قاشق چایخوری پودر پیاز
۱ قاشق چایخوری پودر سیر
فلفل سیاه و نمک به اندازهٔ دلخواه
۱½ پیمانه برنج خشک + آب لازم برای پخت
طرز تهیه
1. برنج را طبق دستور روی بسته بپزید و کنار بگذارید.
2. ۱ قاشق روغن را در قابلمه روی حرارت متوسط رو به کم گرم کنید. تخم گشنیز، زیره و نعناع اختیاری را اضافه کنید و ۳۰ تا ۶۰ ثانیه هم بزنید تا عطر آن بلند شود.
3. گوجهفرنگی و آب آن را اضافه کنید. ۷ تا ۱۰ دقیقه بپزید و هم بزنید و گوجهها را له کنید تا سس درست شود.
4. باقی روغن، پودر پیاز و پودر سیر را اضافه کنید و حدود ۱ دقیقه بپزید.
5. آب سبزیجات و لوبیای قرمز را اضافه کنید. فلفل سیاه و کمی نمک بزنید.
6. حدود ۱۵ دقیقه بدون درپوش روی حرارت کم بپزید و گاهی هم بزنید تا سس غلیظ شود. اگر خیلی غلیظ شد کمی آب اضافه کنید.
7. مزه را بچشید و ادویه را تنظیم کنید. لوبیا را روی برنج یا کنار آن سرو کنید.
اگر پیاز و سیر تازه دارید، به جای پودر استفاده کنید. اگر زیره یا تخم گشنیز کامل دارید، آنها را در روغن کمی تفت دهید. اگر نعناع خشک دارید اضافه کنید. برنج باسمتی سنتی است، اما هر نوع برنج سفید مناسب است.
